NEW RECIPE! OVEN ROASTED STEELHEAD TROUT WITH CHIMICHURRI SAUCE!





          

Yummy, healthy, and quick.  The perfect No Sweat Plus meal for your entire family! This zesty fish dish on your dinner table in about 30 minutes! Switch out the fish to your family's favorite or try a new fish! This recipe is equally good using chicken.  The chimichurri sauce can also be served over fish or chicken after the roasting process.  It will maintain it's beautiful green color even better uncooked!  Feel free to use your favorite combination of herbs and aromatics!  Enjoy!

Ingredients:
2 Steelhead Trout Filets
1 quarter white onion
2-3 cloves of garlic
1 quarter green, yellow, or red bell pepper (substitute your favorite or use some of all 3 if you'd like)
Hand full of fresh cilantro (substitute with your favorite herb and/or add more herbs if desired).
1tbsp Olive oil
1/2 of a lemon
1/2 of a lime
(you may also use crystallized lemon or garlic)
1 tbsp of Dijon mustard, or two tsp of yellow mustard with a splash of white wine.
Use the following seasons to taste
fresh cracked black pepper, sea salt, season salt, garlic powder or garlic salt, cumin, ground red pepper, chili powder)

Heat oven to 400 degrees. Season fish lightly with season salt. Set aside. Place all other ingredients into a blender and blend until slightly chunky or smooth. Pour mixture over fish. Place fish in baking dish.  Roast for 10 minutes per inch of fish. Cook medium well! Cool fish.G Plate and garnish with chopped fresh fish herbs and lemon slices if desired. Kale salad pairs nicely with this dish.
